Maltese Rice Recipes

Ross il-Forn: A delicious mouth watering baked rice dish …


Ross il-Forn (which literally means baked rice) is one of the most popular rice recipes on the Mediterranean island of Malta.

This delicious baked rice dish is one of the top favourites among the locals and is very much an integral part of Maltese cooking.

Although this is not the easiest of Maltese rice dishes since there are other easy rice recipes that are much faster to cook, it’s really not that difficult to prepare.

The appetizing aroma of this dish when it’s just coming out of the oven, is immediately recognizable and well loved by every Maltese.

Try it and you’ll see why :)

Ross il-Forn

Ingredients (serves 4 - 6)

500 grams (or 1 lb and 1.63 oz) rice

500 grams (or 1 lb and 1.63 oz) minced pork

3 rashers bacon

2 large onions (finely chopped)

1 small can tomato paste (200 grams or 7.05 oz)

1 can chopped tomatoes in tomato juice (400 grams or 14.10 oz)

Half a teaspoon curry spice

4 eggs (beaten)

Salt and Pepper

Grated cheese

1 cup water

Method

Sweat the onions in some oil. Add the minced pork and mix well. Cook for a few minutes until the meat starts to become brown. Add the bacon and mix. Pour in the chopped tomatoes and the tomato paste. Add the water. Season with salt and pepper and add the curry spice. Stir well and allow to simmer for about an hour.

In the meantime, boil the rice. (don’t forget to add a pinch of salt to the water when boiling). Drain the rice from the water.

Add the minced pork mixture to the rice and mix well. Pour in the eggs and mix well.

Pour in the whole mixture into an oven proof dish. Sprinkle some grated cheese on top. Bake in a moderate oven without stirring for about 1 hour and 15 minutes.

And voila! Your Ross il-Forn is ready.
