Maltese Pork Chops Recipe

Patata l-Forn: Delicious yet easy to do roast pork recipe ...

This pork chops recipe is perhaps one of the easiest roast pork recipes that you’ll come across. Patata l-Forn is a traditional Maltese dish, but to this day it's still among the top favourites on the Maltese islands.

In fact, it’s safe to say that it’s one of the top favourites for Sunday lunch.

A curious fact about this roast pork recipe is that the Maltese people refer to it as simply baked potatoes or patata l-forn as it’s known in Maltese, even though meat is one of the main ingredients!

The main reason for this is because the potatoes acquire such a delicious taste with the help of the fennel, the other spices and the juices of the pork that they are by far even more desirable to eat than the baked pork chops themselves!

The potatoes look even more appetizing since they’re roasted and so have that lovely golden brown crust.

Patata l-Forn: Pork Chops Recipe

Ingredients

2 large onions (thinly sliced)

1 chicken cube

5 pork chops

6 large potatoes (peeled and sliced thickly)

Salt & Pepper

Curry

2 teaspoons Fennel

Water

Method

Choose an oven dish that is big enough to take the meat and the potatoes. Start by placing all the sliced onions at the bottom of the dish, spread them all across the dish so that they’ll form a nice first layer.

Crush the chicken cube or cut it into small pieces and sprinkle all over the onions.

Add the meat by putting all the pork chops on top of the onions. Sprinkle with salt, pepper and curry. Sprinkle also 1 teaspoon of the fennel.

Add all the potatoes and place on top of the meat. Sprinkle with salt, pepper and curry. Sprinkle the remaining fennel on the potatoes.

Add water from the sides of the dish so as not to wash away the spices. Add enough water so that the onions and meat are covered with water.

Roast in moderate oven for some 2 and a half hours. For the first hour, cover the dish in tin foil. After that, remove the foil so that the potatoes will eventually become crusty and golden brown.

As you can see, this meal is very easy to do and requires very little preparation - you basically peel and slice the onions and potatoes and add the pork chops.
